He sees the future of food rooted in community-driven dining experiences, a return to neighbourhood familiarity, honest flavours, and stories that connect.

The boldest move? Leaving a stable career in Michelin-starred restaurants to start Fukudon from scratch, while raising two young children with his wife. It was a leap with no safety net, but it taught him resilience and shaped a life built on grit, meaning, and the simple joy of a good bowl of rice.
